Banana Blueberry Muttfins 

For this recipe we won’t be using any leavening agent such as baking powder or baking soda.  Both ingredients are fine in small quantities, such as what would be used in a muffin or cake.  However, since in large quantities they can be harmful, and accidents happen, I wanted to try my hand at making it without.  So, for this recipe we will be using whipped egg whites to give our muffins a little lift. 

Bananas 

Bananas are high in fiber to keep your dog’s tummy feeling good.  Fiber helps to move food through the intestinal tract which can help to resolve both constipation and diarrhea.  And as we all know bananas are also a great source of potassium.  Potassium supports a healthy kidney and heart, as well as promotes healthy bone density.  They are also higher in sugar than some other fruits like berries.  So, when sharing with your dog just make sure to do so in moderation. 

Eggs 

Eggs are a great source of easily digestible protein.  However, they are also chocked full of linoleic acid and vitamin A both of which are great for your dog’s skin and coat. 

Coconut Oil 

Coconut oil can help improve cognitive function by offering the brain energy in the form of ketones.  Ketones are molecules that can partly replace carbs as an energy source for your brain.  Too much is not a good thing as it can shift your dogs PH balance to be too acidic, so keep everything in moderation. 

Directions 

Preheat oven to 350°F. 

Into one bowl beat the egg whites until stiff peaks form.  Note:  since we are not using any stabilizing agents in the eggs, they may not hold their shape quite as well as if you were say making a meringue.  

In a separate bowl mix together the banana, egg yolks, and melted coconut oil.  Add in coconut flour and mix just to combine.  Note:  You will want to work quickly as the coconut oil will want to solidify if your eggs are cold.  Room temperature eggs will help but you will still need to work quickly to avoid the batter thickening before the next step as coconut oil is still a solid at room temperature. 

Gently fold the egg whites into the banana mixture. 

Once combined gently fold in the blueberries.  You can use fresh or frozen blueberries for this.  Since we are making mini muffins, today I used frozen wild blueberries.  The wild blueberries are much smaller in size than regular blueberries.  If you are using fresh blueberries you may want to cut them in half.

Divide batter evenly into your mini muffin tray, filling about ¾ of the way.  You can find my favorite one here!  This should make approximately 24 mini muffins.  Note:  I tried this recipe in a fun shaped silicone tray as well and I don’t recommend it.  The muffins never reached a point of doneness where they would come out of the tray in one piece, so a traditional mini muffin tray is definitely the way to go.

Since one of Vincent and Zoe’s all time favorite treats are blueberries, I thought this would be the perfect time to roll my sleeves up and make them some healthy and delicious muffins.  I’ll say the texture is a different than regular banana bread and they are not nearly as sweet, but that didn’t stop me from trying one…okay okay two. 

Ingredient Benefits 

Coconut flour 

If you are looking for a safe and allergy friendly flour alternative for your dog coconut flour is a great option.  Since coconut flour helps to prevent the surge of sugar into the blood and improves the release of insulin it is a great flour to pair with the fruit in this recipe.  We don’t need Fido getting a sugar high haha. 

Blueberries 

Blueberries are low in sugar and calories and a great source of vitamins, minerals and antioxidants.  The antioxidants help to fight free radicals, which are responsible for cellular damage in both dogs and humans.  And studies have even shown that these antioxidants can reduce the effects of brain aging, so if you have a senior dog, blueberries can be a wonderful boost to a healthy diet. 

Always remember that while treats are fun, they should provide no more than 10% of your dog’s total diet. 

Ingredients 

  • ¼ cup Coconut Flour 
  • 1 Overripe Banana 
  • 4 Eggs separated 
  • 2 Tbsp Coconut Oil 
  • ½ cup Blueberries 

Makes approximately 24 mini muffins. 

Bake for approximately 20 minutes or until lightly browned around the edges and a toothpick comes out clean.  Let cool in pan until room temperature.
